That's fine, of course, but the demographics data is used in a lot of programs and a lot of planning so just accept that by refusing to participate you waive your right to complain afterwards.

I have a nephew who works for the US "Bureau of the Census". He travels the US getting things set up and ready for the next one.
In US census over the years the questions have varied wildly over time. Prior to the 1860s, they included questions on any slaves.
Not sure how they would setup the question on Trans. I know some that want an other or none for Gender/Sex. Would they ask if you were born M/F, how you identify now as TG. Doubt they would break down into sub-categories.
