If what you are writing is accurate, you are describing manic depression at best on her part, meaning that she needs professional help. Throw her an ultimatum; get help or you walk, but before you do, talk to a lawyer and prepare yourself. No one, and I mean no one, needs to put up with that. I know, believe me.
I don't agree with Niki's advice. Don't involve the children. That will force them to take sides and one of you will end up getting ganged up on.
